 My Preferred Burger Recipe

Although I grew up preparing chicken kabobs and beef kafta, once we relocated to the Midwest, homemade hamburgers became the star of the grill.

My mother always maintained a straightforward approach to her hamburger recipe, utilizing ground beef, salt and pepper, an egg, and breadcrumbs. Depending on the weather conditions, we would either grill them outdoors or cook them indoors on a grill pan. Over time, I have acquired several tips that enhance my homemade hamburger recipe, ensuring they remain juicy and flavorful while still being quite simple to prepare. (Be sure to check out the tips below!) These burgers pair wonderfully with a side of grilled sweet potato wedges!

Beef Hamburger Ingredients
Ingredients required for the recipe prior to preparation: Worcestershire sauce, spices, breadcrumbs, an egg, and lean ground beef.

Ground beef: I prefer using 85% lean ground beef for my burger patties. This fat content is ideal for keeping the burgers juicy without making them overly greasy.
Egg: If possible, use an egg that is at room temperature. This allows the egg to blend more seamlessly with the ground beef.
Worcestershire sauce: While A1 or other steak sauces can be used, I believe Worcestershire sauce is the best choice for burgers.
Seasonings: A combination of paprika, onion powder, garlic powder, salt, and black pepper.
Breadcrumbs: Ensure they are finely ground for optimal texture. You can also create your own breadcrumbs if you find yourself without any.

How to Prepare Hamburgers

Step 5: Carefully shape each portion into a patty, approximately ¾-inch thick.

Step 6: Utilize your thumb to press down in the center of each patty, forming an indent. Place the patties in the refrigerator.

Step 7: Preheat the grill or grill pan to a medium temperature and apply oil to the grates or pan.

Homemade Beef Hamburger Recipe

This hamburger recipe incorporates 85% ground beef, along with binders and seasoning. Cook on the grill or stovetop in approximately 10 minutes. Assemble the beef patties in a bun with your favorite toppings.

Notes

The nutritional information is based on one beef hamburger and does not account for the bun, toppings, or sides.
Storage: When stored in an airtight container in the refrigerator, the cooked burgers will remain fresh for up to 3 days. They can be reheated in a skillet with a small amount of oil or in the microwave until heated through.
Freezing Instructions: Freeze uncooked patties on a baking sheet, then transfer them into a ziplock bag. Thaw in the refrigerator overnight prior to cooking.

Substitutes: For optimal results, adhere to the recipe as written. However, here are some common substitutes that may be effective in this recipe.
Instead of using breadcrumbs, all-purpose flour can be utilized.

To create a gluten-free version, consider using quick oats, almond flour, or panko breadcrumbs.

Please be aware that the video features Dijon mustard, but this revised recipe now incorporates Worcestershire sauce for a slightly more savory taste. Dijon mustard remains an excellent option for this recipe.

This blend contains sufficient fat to maintain the moisture of the hamburger patties without being greasy or causing flare-ups. Regular ground beef tends to have excessive fat that drips onto the grill, while extra-lean beef can lead to dryness.
Seasonings: Worcestershire sauce aids in browning the beef and contributes a delightful savory flavor. The seasonings are uncomplicated. The salt in this burger recipe can be substituted with a homemade burger seasoning.
Cheese (optional): Cheddar cheese is among the finest choices for topping a burger, but feel free to explore other options such as pepper jack.

How to Cook Hamburgers
I reserve breadcrumbs for meatloaf and allow the flavor in this recipe to derive from the beef itself!

Combine beef, grated onion, and Worcestershire sauce. Season with salt and pepper to taste.
Shape the patties and create an indentation in the center of each with your thumb to prevent them from puffing up during cooking. Chill as directed in the recipe below.

GRILL: Cook the burgers over medium heat for 4-5 minutes on each side.

AIR FRYER: Arrange the prepared patties in a single layer in the air fryer. Cook for 6 minutes, flip, and then cook for an additional 3-5 minutes.

The secret to achieving perfect hamburgers, irrespective of the cooking technique employed, lies in the use of a meat thermometer. Burgers should attain a temperature of 160°F or slightly lower, as they will continue to cook after being taken off the heat. Additionally, it is essential to allow the burgers to rest for a few minutes prior to serving.

Notes
Utilize the large side of a box grater to grate the onion.
To Freeze: Hamburgers can be frozen (either raw or cooked and cooled) with parchment paper placed between each patty for a duration of up to one month.
To Cook on the Stove Top
Preheat a cast-iron skillet over medium-high heat.
Season the exterior of the burgers with salt and pepper according to taste.
Introduce 1 tablespoon of olive oil into the skillet. Add the beef patties and cook for 5-6 minutes on each side or until they reach 160°F.
Allow to rest for 5 minutes. Serve on toasted rolls or buns.
Air Fryer
Arrange the prepared patties in a single layer within the air fryer. Cook for 6 minutes on one side, flip, and continue cooking for an additional 3-5 minutes.
Store raw burgers in the refrigerator for up to 2 days. Store cooked burgers in the refrigerator for up to 4 days.

  • 1 1/2 pounds ground chuck (80 to 85% lean)
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1 tablespoon vegetable oil

INSTRUCTIONS 

In a large bowl gently mix the beef, salt and pepper together. Divide the homemade hamburger meat into 4 equal portions. With your hands, gently and lightly shape each portion into a 3/4 to 1-inch thick round patty. Press the center of each patty down in the center to create a 1/4-inch indentation. This will help prevent your homemade hamburgers from bulging in the middle as they cook. 
 Rub oil around a Cast-Iron Grill/Griddle or a Large Cast Iron Skillet placed on the stove over medium heat. When the oil is glistening and pan is hot, place the burgers into the pan indentation side up.

OUR FAVORITE HOMEMADE HAMBURGER PAN PIZZA 

CRUST: For 1 (9 x 13) pan (or 1 round pizza pan).

INGREDIENTS
 
  • 1/2 pkg. dry yeast
  • 1/2 c. warm water
  • 1/2 tsp. sugar
  • 1/2 tsp. salt
  • 1 tbsp. salad oil
  • 1 1/2 c. flour
INSTRUCTIONS 

Dissolve yeast in warm water. Stir in remaining ingredients, about 20 strokes. Allow dough to rest 5 minutes. Pat crust in greased pan. Partially bake crust at 400 degrees for 10 minutes. Add your favorite meat sauce and toppings and bake 10 more minutes. Add cheese and bake 5 more minutes. Cut into serving portions. Or Our Favorite Hamburger meat sauce:
  • 1 lb. hamburger, browned
  • 1/4 c. onion, chopped
  • Salt and pepper to taste
  • 1/2 c. catsup
  • 1 c. water
  • 1 to 2 tbsp. dry sloppy joe seasoning mix
  • 1 tsp. oregano
  • 1 sm. can sliced mushrooms
Brown hamburger, drain fat, add other ingredients and simmer until flavors are blended well. Spread hamburger mixture on partially baked crust. Add pepperoni slices if you like. Bake approximately 10 more minutes. Top with slices American cheese and/or shredded Mozzarella and Cheddar cheeses. Bake 5 minutes or until cheese bubbles. Homemade Hamburger Ingredients
  • 1 pound ground beef
  • 1/3 cup smoked barbecue sauce
  • 1/2 teaspoon apple cider vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 4 soft hamburger buns with sesame seeds
Homemade Hamburger Instructions 

 1. In a bowl, mix all ingredients with your hands until well incorporated. 
 2. Divide hamburger meat into four equal parts and form into patties. 
 3. Heat a frying pan over medium hear and fry for about four minutes on each side or until juices run clear when you press down on patties with a spatula. 
 4. You can also cook these on a grill, though they are a little softer than your average hamburger and you will have to use caution to prevent them from falling apart. Serve on soft buns and enjoy with French fries or mashed potatoes. The home made hamburger is ready !

  • 1 lb. ground beef or deer burger
  • 1 box macaroni and cheese dinner
  • 1 med. onion
  • 1 tbsp. oregano (flakes or whole)
  • 1 tbsp. parsley flakes
  • 1 qt. tomato juice
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
HOMEMADE HAMBURGER INSTRUCTIONS 

Brown ground beef or deer burger in skillet. Add box of macaroni and cheese dinner with all other ingredients. Simmer 10 to 15 minutes. Then serve. If it gets dry or needs more juice add a little water and catsup. The homemade hamburger recipe is ready. Enjoy it !

Hamburger Ingredients

  • 1 lb ground beef or ground turkey (sometimes I use only ½ lb)
  • ½ cup onions, diced
  • 1 tablespoon butter, optional
  • 2 cups milk
  • 1 cup cold water
  • 2 cups elbow macaroni, uncooked
  • ½ teaspoon sugar
  • 1 teaspoon salt or seasoning salt
  • ¼ teaspoon black pepper
  • ¾ teaspoon oregano
  • ¾ teaspoon parsley
  • ¾ garlic powder
  • ½ teaspoon chili powder
  • 1 teaspoon paprika
  • 2 cups cheddar cheese, shredded
Hamburger Instructions

Brown ground meat in a skillet over medium heat until almost done.
Add in onions and cook until tender.
Drain meat & onions on paper towels and return to skillet.
Add remaining ingredients except for the cheese.
Stir to combine.
Bring to a boil.
Reduce heat, cover and cook until pasta is tender, about 10 minutes. Stirring occasionally.
Remove from heat and stir in cheese. Sauce may be thin.
Let pasta sit to thicken the sauce, meanwhile adjust seasonings if needed.
Serve and enjoy the hamburger..

Ingredients
  • 1 1/4 (565 grams) pounds ground beef
  • 3 cups (710 milliliters) milk
  • 1 3/4 cups (4 dl) macaroni (whole wheat, gluten-free or regular all work)
  • 1 tablespoon cornstarch
  • 2 teaspoons hot paprika
  • 1 1/2 teaspoons garlic powder
  • 1 1/4 teaspoons onion powder
  • 1/2 – 1 teaspoon salt (I like things on the salty side and use 1 teaspoon)
  • 1 1/4 cup (141 grams) cheddar cheese, shredded
Directions

In a large frying pan over medium heat, cook the meat until almost browned. A little pink is okay as it'll be simmering for a while later on. If there's a lot of liquid, feel free to drain it (though not necessary).
Add the rest of the ingredients to the pan, except for the cheddar cheese, and stir until well combined. Cover with a lid and simmer for 10-20 minutes, stirring occasionally. Whole wheat pasta takes about 20 minutes but regular and gluten-free pasta will take closer to 10 (the exact time depends on the shape of the pasta). If using whole wheat, you may need to add a little more water or milk to the pan if you see that it's sucking up too much liquid.
Stir in the cheese until well mixed in. If you like the consistency, serve immediately. If you want it to be a little thicker, wait about 5 minutes. Enjoy !

5.Remember to add salt and pepper.
6.Shape mixture into 4 patties, each about 3/4-inch thick.
7.You can bbq, fry or broil the burgers for 10-15 minutes.

  • 1 pound ground lamb (preferably organic and fresh from your local butcher)
  • 3/4 cup sweet barbecue sauce

1. Preheat oven to 375F.
2. With a drinking glass, form four cups out of aluminum foil and set them in a glass baking dish that’s large enough to contain them all without squashing them.
3. In a mixing bowl, combine lamb, barbecue sauce, salt, and garlic powder.
4. Mix everything together with your hands until seasons are well incorporated with the meat.
5. Divide the meat into four equal portions, shape into thick patties, and place one in each foil cup.
6. Bake in preheated oven for 25 minutes or until the meat’s inner temperature reaches 155 degrees.
7. Remove pan from oven, let sit for five minutes, gently remove burgers from foil cups with a spatula and serve on soft rolls. These home made burgers are so flavorful ..enjoy it !
